“Attention and dedication to the smallest details is what sets every aspect of Sangre de Vida apart from any other tequila. One of the most important ingredients in a great tequila is the agave. La Cofradia, the distillery behind Sangre de Vida is also an agave grower with more than 3000 acres of agave fields under cultivation in the hills near the city of Tequila in the state of Jalisco. This region is inside the designated area of the origin of Tequila and contains a unique soil that produces the best agave. Quality Blue Weber agave requires between 10 years and 14 years of growth before reaching maturity. When the raw sugar content of the agave reaches 23 – 28 degrees brix sugar it is harvested by hand.
The agave piña hearts are slowly roasted in hornos, centuries old traditional thick, stone walled brick ovens for 36 hours. This traditional art of slow cooking in brick ovens help retain the sweet natural mellow flavors of the carefully grown agave. After the hearts of the agave piñas are cooled, they are shredded and squeezed to extract the sweet juice that is set to rest for five days in a natural fermentation. This step is customary of the best tequilas producing fuller body, greater aroma and lasting taste.
Sangre de Vida is distilled three times with great care to obtain a distillation showcasing the best characteristics, the purest tequila and the highest-quality product. The distillation is completed in small stills with more even heat throughout to insure the aromatic essence of the tequila.”
