Ginger Beer Margarita

More times than often, what happens to be in my fridge and pantry dictate what I am drinking. I rarely make an extra run to the store to get recipe items.  So, I was looking for something refreshing and cool for a hot late summer afternoon.

Things I had around the house:

  • Fresh Lime
  • Fresh Ginger
  • Ginger Beer
  • Tequila
  • Salt
  • Simple Syrup

I like to put lime and ginger in green smoothies so I was lucky to have those fresh items around for ingredients and garnish. Lime has a ton of Vitamin C in it, along with antioxidants and anti-carcinogenic detoxifying properties. Ginger is soothing on the gut and a powerful anti-inflammatory. On to the recipe. You don’t care why I was drinking or how this cocktail made me ‘feel’. I hate that about blogs. They make you scroll to the bottom to get the recipe. I just wanna make a drink already!

To make a single, if you drink alone like me:

  • 1.5 oz ( 1 shot) tequila
  • 1 ounce (2/3 shot) fresh lime juice
  • 3 ounces (2 shots) ginger beer
  • .5 ounce (1/3 shot) simple syrup
  • Salt if you feel like lining the rim
  • Fresh ginger slices and lime speared and inserted into the cocktail to add more zest

I also had a fig and coconut cookies that I found at Trader Joe’s which was a delicious compliment to the drink. P.S. Figs make the reminisce on my childhood and I have flashbacks to the movie Fern Gully: The Last Rainforest (1992). Anybody else feel this way? Haha

(I would probably be ok swapping the ginger beer for ginger ale btw, in case you are into that or don’t have the ginger beer on hand)
